kale and apricot salad

Autumn colors and flavors inspire The Salad Girls fall greens !  I love, love, love fresh kale !  It is a “super green food”  with its dark leafy green and or purple color, Kale is considered to be a highly nutritious vegetable with powerful antioxidant properties and is anti-inflammatory.

 Kale is very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium Kale, as with broccoli and other brassicas, contains sulforaphane (particularly when chopped or minced), a chemical believed to have potent anti-cancer properties.  I try to incorporate  Kale  into all my mixed green salads all year round, but especially when its “in season”, the fall.  The Apricot and Kale Slaw is a great Soiree Salad for the buffet-no mayo!
